A superb approach to save leftover sauces is to store and freeze them in ice cube trays. Then you can reheat them in a saute pan whenever you want a speedy sauce, in just the portion size that you need. This is great for making straightforward meals during the week.
For a great recipes for caramelize roasted veggies; heat your oven up as hot as it will get, and then place an empty roasting sheet inside for ten to 15 minutes. Meanwhile, toss the veggies with olive oil & seasonings. Place them on the heated pan and the high temperature will caramelize the vegetable sugars quickly.
For an effective way to cool down hot, freshly made stock through the winter, set the covered pot outside for a small while. You need to not put such a large quantity of hot liquid inside your refrigerator. Setting the pot outside is a fantastic method to cool the stock sufficient for refrigerating or freezing, and it could be easier to skim off the fat layer on the top.
